Holger Zurbrüggen has
named his gastronomic style in the Balthazar ‘metropolitan cuisine’. He defines
‘metropolitan’ as “self confident playing with global influences on a domestic,
central European base”. This widely-travelled chef is open minded, but sees his
starting point as classical Mediterranean and German cuisines. ‘Metropolitan’
stands for Berlin: self-confident and communicative.
The highlight is the Balthazar menu, which is served only at the main table,
the 4m long Balthazar Table. It starts from 5 courses and stretches up as far
as the opulent 12 course menu.
