Holger Zurbrüggen has, since February 2006, been owner of the Balthazar and a subversive gastronome in the upper Kurfürstendamm.  His passion for travelling and discovering remains undiminished despite his ‘24 hour job’.

He has always been the most cosmopolitan of Berlin’s best chefs: touring the world as a private chef; being a guest chef in Bangkok, and in illustrious hotels such as the Buri Al-Arab in Dubai, and Raffles in Singapore - are just a few of the positions previously held by this well-travelled Westphalian.


Once settled in Berlin, Holger Zurbrüggen established his reputation in the legendary Langhans, in the Louis gourmet restaurant in the Steigenberger Hotel. Founder of Japanese-Italian cooking, he crowned this achievement by winning the world risotto cooking championship held in Italy in 1999.
